How It Started

Jerome, the Founder of Bones BBQ, is on a mission to MAKE IT FRESH! No packaged food, everything made fresh in the kitchen.  The team at Bones BBQ takes pride in their use of high-quality ingredients, locally sourced whenever possible.

Jerome has always had a passion for BBQ and wanted to share his love for it with the world. After years of perfecting his recipes and techniques, he decided to open up his own restaurant, Bones BBQ.

Located in Minot, North Dakota, Bones BBQ offers a cozy and welcoming atmosphere where customers can enjoy delicious and freshly made BBQ dishes. From tender ribs to juicy pulled pork sandwiches, every item on the menu is carefully crafted with Jerome’s special touch.

But what truly sets Bones BBQ apart from other restaurants is its commitment to using fresh ingredients. Unlike many establishments that rely on pre-packaged or frozen food items, Jerome insists on making everything.

OUR STORY

Bone’s BBQ Smokehouse & Grill officially opened its doors in 2017, but the story starts long before that. For over 50 years, the Lundeen family has been fueled by a passion for homemade meals, hard work, and bringing people together.

It began in the late 1960s, when an independent woman, navigating life as a single mother, opened her restaurant with a simple dream: to share her love for food, family, and tradition with her community. That restaurant became the foundation for her son, Jerome Lundeen, who learned the value of service, flavor, and perseverance from behind the counter.

Growing up in Minot, Jerome split his time between his mother’s Capri restaurant and his father’s auto body shop. That strong work ethic stuck with him. After facing setbacks and life’s curveballs, Jerome opened his own business, Jerome’s Autobody, in 1975. He built a career there and eventually passed both family-run auto shops to his sons in 2011. But after retiring from the automotive world, Jerome wasn’t done. He had one more dream to chase.

He wanted to bring back the kind of food that too many restaurants had left behind: meals made from scratch, smoked low and slow, and always worth gathering for. With years of experience, a backyard commercial kitchen, and a whole lot of determination, Jerome spent countless hours experimenting with recipes, crafting his sauces, and meeting with BBQ pros across the country.

His sons watched that passion unfold. In 2017, Jerome and his youngest son, Jonah, brought those recipes to life and opened Bone’s BBQ. Their goal was to keep the flame burning for authentic, handcrafted barbecue and to share it with the people of Minot.

Today, Jerome enjoys retirement, but his legacy lives on. His son Jarid, who always dreamed of owning a restaurant, now leads Bone’s BBQ with the same values the family was built on. With a fresh energy and deep respect for tradition, Jarid continues to blend time-honored flavors with a modern twist.

Through every plate of ribs, every bite of brisket, and every smoky scent that fills this space, Jerome’s love for good food and the community that shares it is still alive.

And as we grow, some things never change: fresh ingredients, homemade meals, and the belief that food just tastes better when it’s shared with family and friends.
